Tonight’s Meal

I thought I would share a recipe that I enjoyed tonight. It is a healthy and easy meal. I put Florence and the Machine Radio on the speakers and let the ingredients take me away!

Ingredients:

Boneless and skinned chicken breasts, green bell peppers, spinach, yellow onions, olive oil, sherry vinegar, butter, garlic powder, nutritional yeast, salt and pepper to taste, natures seasoning.

Next: 

Set the oven on 400 degrees then place the aluminum foil on a baking sheet. Put four chicken breasts on the baking sheet and sprinkle the sherry, pepper, olive oil, natures seasoning onto the chicken breasts. The chicken should bake in the oven at 400 degrees for 30 minutes. Begin to chop the onions and peppers. Add the olive oil, butter, and nutritional yeast with the vegetables on medium heat. Once the vegetables are warm and tender throw in the spinach on low heat. Once the spinach softens add 1 tablespoon of sherry vingar, olive oil, and pepper. When the 30 minutes is up, cut the chicken, put the peppers, onions and spinach into a bowl with the sliced chicken on top. I like to add chia seeds to this because it is an excellent source of fiber and omega-3 fatty acids.

Nutritional yeast is a great source of B vitamins. The chicken is a great source of leaner protein followed by the chia seeds. Spinach will fuel your body and keep you going. I grocery shop at Aldi, and I like to do my bulk shopping at Mountain Peoples Co-op located on Pleasant Street.
